Ever since I started trying to eat healthier and incorporating a ketogenic diet into our lifestyle, I’ve been on a quest to find genuine recipes that my family will love. One of my hubby’s favorite holiday flavors is eggnog and one of our favorite cookies that incorporates this rich seasonal flavor are these Super Soft Egg Nog Cookiesthat I shared with you a few years ago.

When I was contacted and asked to consider participating in the Steviva Holiday Keto Blogger Recipe Challenge, I just knew I wanted to make over mySuper Soft Egg Nog Cookies recipe and that’s exactly what I did!

I haven’t calculated the nutritional values yet, but you can rest assured that by using almond and coconut flour instead of white flour and substituting the granulated and powdered or confectioners sugars with Steviva™ granulated and powdered sweeteners, you’re gonna save a lot of calories.

Steviva has developed safe, low glycemic, low caloric sweeteners thattaste and act just like sugar. Where were these products when I first tried low carb dieting 20 years ago?

The original Egg Nog Cookies Recipe included frosted cookies. I chose to use an egg nog glaze on these cookies instead. Sometimes all that frosting was just a bit much. Unless, of course, you have an insatiable sweet tooth like my husband. If you’d like to try them frosted, read on….

Keto Egg Nog Cookies

These soft Keto friendly eggnog cookies are sure to become a favorite low carb and sugar-free cookie!

Ingredients

  • 1-1/2 cups almond flour
  • ¼ cup coconut flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ tsp nutmeg
  • ½ tsp cinnamon
  • ½ cup butter softened
  • ½ cup Steviva Blend granular
  • ½ c light brown sugar
  • 1 large egg
  • 1 t vanilla
  • ½ t rum extract
  • 2 tbsp egg nog

Glaze

  • ¼ cup Stevia Blend confectioner sweetener
  • 2 tbsp egg nog
  • 1/4 tsp rum or vanilla extract

Instructions

For the Cookies

  1. Preheat oven to 325F and line a baking pan with parchment paper.
  2. In a medium bowl, whisk together the almond flour, coconut flour, baking powder, salt, nutmeg and cinnamon.
  3. In a large bowl, beat the butter with the Swerve (white and brown granular) until well combined. Beat in the egg, vanilla and rum extracts and egg nog. Then beat in the almond flour mixture until the dough comes together.
  4. Roll the dough into 1 inch balls and place 1 inch apart on the prepared baking sheet. Press the balls down with the palm of your hand to about ½ inch thick.
  5. Bake about 12 minutes, until just barely beginning to firm up. Remove and let cool on the pan.

For the Glaze

  1. In a medium bowl whisk together the Swerve, egg nog and vanilla extract.
  2. Dip the top of the cookies into the glaze and set back on the pan.
  3. Sprinkle as desired with cinnamon, sprinkles or walnuts.

      If you’d like to try these cookies with a frosting instead of the glaze, then I’ve got an amazing recipe for you. Instead of just whipping up some cream cheese with your sugar alternative, we’re gonna add a little butter, egg nog and rum extract.

      The butter kind of takes the edge (tang) out of the cream cheese frosting and renders a smooth, creamy and perfectly naturally sweet version of cream cheese frosting that you grew up with. Only better!

      Keto Cream Cheese Egg Nog Frosting

      This low carb and sugar free cream cheese frosting is light and fluffy. Infused with egg nog, it’s sure to be your go-to cream cheese frosting!

      Ingredients

      • 12 oz cream cheese softened
      • 1/2 cup Steviva KetoseSweet + Powder plus more
      • 1/2 tsp rum extract
      • 3 tbsp egg nog
      • 4 oz salted butter softened
      • 3 drops Steviva KetoseSweet + Liquid to taste

      Instructions

      • Using a hand mixer, beat the cream cheese in a medium bowl until smooth.

      • Add the Steviva KetoseSweet + Powder sweetener and continue beating until light.

      • Beat in the rum extract and egg nog until well combined.

      • Continue by adding the softened butter and beat well until well combined and light. You may need to add more powdered sweetener to obtain the correct consistency. Add in a few drops of Steviva Liquid, if desired, for additional sweetness.

      • Refrigerate until ready to use and beat again before using until light and fluffy.

      Makes about 2 cups.

      These Keto Eggnog Cookies turned out super soft and a wonderful nutty treat. You can definitely taste the hint of coconut from the coconut flour and the nutty taste from the almond flour. There’s also a hint of eggnog and vanilla. The Steviva Brand of sweeteners worked perfectly in this recipe, without the aftertaste you get from artificial sweeteners.
